Weizenbrödli with smoked salmon and horseradish cream
- Ingredients:
- 1 Slice of smoked salmon
- 1 Tablespoon of cream cheese
- 1 Piece of fresh horseradish
- 1 Lime
- 1 Twig Dill
- Weizenbrödli
Preparation:
Flavour the cream cheese with lime juice and some grated horseradish and put it on the Brödli. Put a slice of smoked salmon on the cream cheese and sprinkle it with grated lime peel, grated horseradish and dill.
Vollkornbrödli with herb cream cheese and trout caviar
- Zutaten:
- 2 Tablespoons of cream cheese
- 1 Twig Parsley
- 1 Twig Basil
- 1 Twig Rosemary
- Chive and leafs of celery
- Salt, Pepper
Preparation:
Chop the herbs, cut the chive, mix the cream cheese with herbs and flavour it with salt and pepper. Garnish the Brödli with trout caviar and herbs.
Gorgonzola Creme with pear slices on Sesambrödli
- Ingredients:
- 1 Pear
- 1 Tablespoon of Gorgonzola
- 1 Tablespoon of Cream Cheese
- Salt, Pepper, Sugar
- Powdered Sugar
- 1 Tablespoon of walnuts
- 100 ml white wine vinegar
- Cress
Preparation:
Peel the pear, cut it into small slices. Also cut the core into wafer-thin slices, put them on baking paper, sprinkle them with powdered sugar and let them dry in the oven for 30 minutes at 90°C. Cut the remaining pear slices into small cubes. Cook a tablespoon of sugar with a tablespoon of water in a small pot. Put the pear cubes in the boiling water and let it cool down. Put the pear compote on top of the Vollkornbrödli.
Potato-Radish-Salad with asparagus and Vollkorn Brödli
- Ingredients:
- 2 small potatoes in the skin
- 1 Radish
- 1 Tablespoons of cube minced white onion
- 5 Leafs of Parsley
- 3 Stakes of Asparagus
- Salt, Pepper, Sugar
- 1 Tablespoon of vegetable oil
- 1 Tablespoon of white wine vinegar
Preparation:
Cook the potatoes in the skin in salted water until they are soft, peel them and cut them into slim slices. Peel the asparagus and cook it in salted water with a bit of sugar until they are al dente. Mix the potato slices with some of the cooking water from the asparagus, salt, pepper, white wine vinegar, parsley and radish slices and let it brew for about 5 minutes. Marinate the potato slices with vegetable oil.
Fill the potato salad in a small glass. Putt the Vollkornbrödli in the salad and garnish it with asparagus and parsley.
